Do you ever have recipes that you just stop making for no reason, completely forgetting about them for years, and then rediscover them and think ‘why the heck wasn’t I making this more regularly?’ This recipe is like that for me. Probably more than a decade ago I stopped making it, then I remembered it just recently so I gave it a go, with a little zhuzhing up in the process, of course. It was a huge hit, my husband LOVED this healthy meatloaf, and it’s the perfect thing with fluffy mashed potato (one of my favourite foods ever) and some veggies! Perfect cosy food, and really easy to make – wonderful!
Healthy Chicken Meatloaf Ingredients
- 500g (1 lb) Chicken breast mince
- 1 medium carrot, grated
- 1 medium onion, grated
- ½ cup breadcrumbs
- 1 egg
- 2 tbs Worcestershire sauce
- 1 tbs olive oil
- 1 tbs steak sauce (or tomato sauce)
- 1 tsp grated ginger
- ½ tsp onion granules
- 2 tsp garlic powder
- 2 tsp dried thyme
- 2 tsp powdered sage
- 1tsp black pepper
- 3 tsp salt
Chicken Meatloaf Basting sauce
- 3 tbs steak sauce (or tomato sauce)
- 1 tbs Worcestershire sauce
- 3 tsp sugar
Healthy Chicken Meatloaf Instructions:
- Pre-heat oven to 200c or 390F and lightly grease a small casserole dish or loaf tin.
- Mix together all the meatloaf ingredients in a large mixing bowl. I wear food-prep gloves and do this by hand.
- Place meatloaf in a baking dish and smooth to shape, then pour over the basting sauce, covering the whole top.
- Bake for 45 minutes, turning once.
It’s really that simple! The chicken mince is very low in fat, so nice and healthy, so I add the olive oil to bring in some good fats, and keep it from drying out, which is also why we grate the onion! Lots of moisture in this recipe which means it’s never dry. It’s also the perfect amount of cooking time to get everything else ready whilst the meatloaf bakes away happily in the oven. You could also make it up the night before and cook the next day if you know you’re going to be particularly busy the next night but still want a healthy, home-cooked dinner. It’s also delicious cold!
Some notes, though, about seasonings and flavours. These are the flavours we love, but you could easily go easier on the seasoning or change them altogether. Also don’t swap out the steak sauce for tomato paste, tomato sauce is fine, but not paste, as the flavour is too intensely tomato-y.
Another trick if you have a family who fiends for the crust of the meatloaf – cook it in a larger dish and flatten it out more, increasing the surface area and giving you more crust!
